Turkey Sausage Quiche

ingredients
1 (2) deep dish pie crust
8 eggs
smoked gouda cheese
extra sharp cheddar
olive oil, salt, pepper,
almond milk (milk of choice)
1 lb turkey sausage
1 tbsp butter
bell pepper (green, yellow, red)
spinach
16 oz cottage cheese
It is one of my favorite dinners! It serves a lot of hungry people, but if eating solo, it lasts as leftovers for a while.

servings: 4-6 per pie
INSTRUCTIONS
1. TOSS broccoli with/ olive oil, salt, pepper, and nutmeg. Roast 375°F for 21 min.
2. PREHEAT oven to 350°F.
3. COOK turkey sausage in a skillet over medium heat until browned. (No extra seasoning needed, it’s already full of flavor!)
4. REMOVE sausage from the pan and set aside. Leave the flavorful juices in the pan.
5. ADD a drizzle of olive oil to the same pan.
6. SAUTÉ bell peppers (red, orange, and yellow) and onions until soft and fragrant.
7. ADD spinach and cook until just wilted. Remove from heat.
(You can swap or add any veggies you like here, mushrooms, zucchini, or broccoli work great.)
8. PARTIALLY BAKE pie crusts for a ONE minutes to thaw them up.
9. WHISK together 4 eggs, salt, pepper, a splash of almond milk (or milk of choice).
9. ADD egg yolks mix, 1/4 of milk and 3/4 cup of cottage cheese and blend. (This mixture fills one pie. Double it if making two quiches.)
10. ADD cooked sausage and veggies evenly into the prepared pie shells.
11. POUR the egg mixture over pie.
12. STIR in shredded smoked gouda and extra sharp cheddar. Use as much cheese as your heart desires, freshly shredded melts best.
13. TOP each quiche with extra gouda and cheddar for a golden, cheesy finish.
14. BAKE for about 1 hour, or until the center is set and the top is lightly browned.
15. COOL for 15–20 minutes before slicing.
16. SERVE warm and enjoy! Perfect for breakfast, brunch, or cozy holiday mornings.
TIP: Prep your veggies and shred your cheese the night before to make this an easy, stress-free morning bake.
