Roasted Broccoli Cheddar Soup

 ingredients

 

3 broccoli stalks (chopped)


 

2 carrots (shredded)


 

1 cup onion, ½ shallot (chopped)
3 garlic cloves (minced)


 

Olive oil, salt, pepper, nutmeg


 

1 lb Italian turkey sausage


 

1 tbsp butter


 

3 tbsp flour


1½ cups milk ( i used almond milk)

 


1 cup heavy cream


 

4 cups chicken broth


 

1 cup of extra sharp cheddar cheese


1/2 smoked gouda cheese

 


Garlic powder, smoked paprika

It is one of my favorite dinners! It serves a lot of hungry people, but if eating solo, it lasts as leftovers for a while. 

prep time:20 mins
cook time:45 mins
total: 1 hour 5 mins 
servings: 4-6 

INSTRUCTIONS 

1. TOSS broccoli with/ olive oil, salt, pepper, and nutmeg. Roast 375°F for 21 min.


2. IN a pot, cook sausage until browned. Remove & set aside, keep the juices.


3. ADD butter, then onion, shallot, carrot. Cook until the onion is translucent.


4. ADD garlic + salt. Cook 1 min.


5. STIR in flour to coat veggies.


6. SLOWLY add milk & cream, whisk until smooth.


7. ADD 2 cups broth, let it cook for 4 minutes, then add the remaining 2 cups.


8. ADD roasted broccoli.


9. SEASON with/ garlic powder, smoked paprika, salt, and pepper.


10. STIR in cheddar and gouda until melted and creamy.


11. ADD sausage back in, simmer 5–10 min on low.


12. SERVE hot, top with/ extra cheese or bread!


TIP: Cook on low/medium heat.
